My lentil bolognese recipe:

Ingredients:
– tomatoes
– carrots
– mushrooms
– onion
– garlic
– soy or tamari sauce
– pasta: I used @yorkshirepasta
– tomato paste
– lentils from @thecleaningcabinet
– seasonings ( basil, oregano, spices, etc)
– veg broth
– nutritional yeast

- Dice up some onions and garlic and sauté them.
- Once the veg are coloured, add in diced mushrooms. Once the mushrooms begin to release their liquid, add in some grated carrots.
- Cook the veg until soft. Then add a spoonful of tomato paste and mix throughly. Then add in your diced tomatoes. (You can use canned or any fresh tomatoes as well).
- Once mixed, add in some soy sauce or tamari sauce and choice of seasonings. I added mixed herbs, chipotle chilli flakes, smoked paprika, and nooch!
- Then add in your veg broth, lentils, and soya chunks (optional).

- Put a lid on a leg simmer for about 5-6min until sauce thickens.

- Now it’s ready to serve or pasta!!
