My lentil bolognese recipe:

Ingredients:

– tomatoes

– carrots

– mushrooms

– onion

– garlic

– soy or tamari sauce

– pasta: I used @yorkshirepasta

– tomato paste

– lentils from @thecleaningcabinet

– seasonings ( basil, oregano, spices, etc)

– veg broth

– nutritional yeast

 

  1. Dice up some onions and garlic and sauté them.
  1. Once the veg are coloured, add in diced mushrooms. Once the mushrooms begin to release their liquid, add in some grated carrots.
  1. Cook the veg until soft. Then add a spoonful of tomato paste and mix throughly. Then add in your diced tomatoes. (You can use canned or any fresh tomatoes as well).
  1. Once mixed, add in some soy sauce or tamari sauce and choice of seasonings. I added mixed herbs, chipotle chilli flakes, smoked paprika, and nooch!
  1. Then add in your veg broth, lentils, and soya chunks (optional).

 

  1. Put a lid on a leg simmer for about 5-6min until sauce thickens.

 

  1. Now it’s ready to serve or pasta!!
